So with my fancy new toy I made a Zucchini Shrimp “Pasta”. Now, this was a pretty hard sell to the hubby because well…zucchini, but this recipe went over really well! I was also pretty shocked at how well it turned out, but you can try it out for yourselves! Here’s the recipe:
2 tablespoons butter
1 lb shrimp, peeled & deveined
1-1/2 lb of zucchini, spiraled
3-4 garlic cloves,minced
1/2 teaspoon red pepper flakes,
(I used 1 tsp…)
1/4 cup chicken stock
lemon juice, (1 small lemon)
salt & pepper
2 tablespoons Parmesan, grated
2 tablespoons parsley, chopped (optional)
Melt butter in a huge skillet w. medium high heat
Add shrimp, garlic & red pepper flakes
Cook until pink, approx 2-3 minutes
Add chicken stock & lemon juice, season w/ salt & pepper
Bring to a simmer
Add fancy spiraled zucchini noodles “zoodles”, cook 1-2 minutes
Garnish w/ Parmesan & parsley
Serve Immediately and ENJOY!
This dinner was so good! Sometimes when you eat pasta, you can feel overly full, but you can have 2 bowls of this and not want to pass out. This is a great low-carbohydrate option for those who are trying to cut back on their pasta intake….like us!
