Pico De Gallo

Hey guys! I was really craving some fresh pico de gallo this weekend, so naturally I had to make some! Here’s just a quick recipe that you can use for tacos, tortillas, or eating it straight out of the bowl…or something…let’s get started!

What you need:

  • 6 roma tomatoes
  • jalapeno
  • 1 small red onion
  • cilantro
  • 1 small lime
  • 2 cloves garlic
  • salt/pepper/cumin to taste

Dice tomatoes & add to bowl

Dice onion (you can really use whatever kind of onion you want, but I prefer red)
Chop the jalapeno (if you want it super spicy leave the seeds)
Mince up the garlic
Chop up your cilantro
Squeeze the juice of 1 lime over the whole mix
Add salt/pepper/cumin to taste
Mix it together in your bowl
Cover and refrigerate for at least an hour

Usually I will put the remaining bit into a mason jar, so I can use it during the week for breakfast or snacks. This pico is fresh, so it’s always great to have on hand.

We used this for some fish and shrimp tacos and it was absolutely amazing.
